However, we often crave a delicious home-cooked dinner meal, and this simple and classic tomato soup with rice is the absolute winner for those lazy, quick dinner ideas that we can do in 20 minutes.

This is the easiest soup to prepare, and the result – no less than perfect! The Italian flavors warm the heart and stomach, and the rice gives you that boost of carbs you need.

Even though this quick and easy tomato rice soup is a simple recipe, it is so delicious. I don’t need to rush to the store to buy fresh tomatoes as this soup is just made from delicious staples that we all have in our pantry. I usually make it when the days are getting colder, upon return home from work. this is the time I crave something hot and satisfying.

Directions

Step 1

Heat a pot with oil and steam the onion for 10 min.

Step 2

Add the garlic at the last 2 minutes and stir until golden.

Step 3

Add the paprika, tomato paste, and the tin of chopped tomatoes.
Mix and add the water. Bring to a boil. Add the rice.

Step 4

Season, balance with date syrup, salt, and pepper.

Step 5

Reduce the heat to low, cover, and let simmer for about 15 minutes or until the rice softens.

Step 6

Add in the basil and thyme, and serve warm and comforting.

Note's

You can use fresh grated tomatoes (4-5 tomatoes – preferably peeled)

You can add some fresh hot chilies for spice.

Instead of date syrup, you can use regular white sugar, honey or maple.
